Nutrient Dense Farming
We want to make sure that you get the maximum access to nutrients because after all your not what you eat, you are what you absorb and assimilate. We farm organically certified because we think that it creates a better product, free of hormones, antibiotics and also provides you the ability to confirm this claim. We do not vaccinate - although allowed within the Organic standards, we choose to care for herd health through closed herds, micro nutrient dense farming and organic highly absorbed supplements (our supplements are 99% absorbed compared to the standard industry rate). At our main farm (Baer family farm), we feed ONLY GRASS, this has been shown to produce meat with higher omega 3 fatty acids, more alkaline ph levels and higher nutrients such as vitamin B, as well as lower levels of toxins traditionally held in fat that would be seen on animals fed grain (corn). The black Angus-cross beef supplied to us from Bast family farm in Wellesley, is primarily grass fed but is supplemented with a minimal amount of organic grains (NO corn or soy) such as oats. Farmer Murray Bast has done extensive research on cattle health & nutrition and believes that by adding a bit of organic mixed grains to the animals diet, it helps increase the omega fatty acid in the meat which means a bit more marbling. The end product is still considered "grass fed beef" but we pride ourselves in being transparent especially due to any allergies or strong personal preferences.

The Breed - "Terroir"
We have a variety of breeds that we use, some are Angus, some are Limosine, and many are a mixed heard including Jersey even! There are certain breeds that have more fat on them than others, however we are committed to the process we think that if we have integrity in the way we do things, that the product will be healthy and great tasting. We believe in building a herd that will work best in the conditions of the land, we have cold winters here and we need a hearty animal, as well as cows that will calf good size healthy calves in the spring without difficulty. By selecting for these traits, those animals that put on good weight, have good marbling, produce healthy calves, are good mothers and do well on grass alone we will build a better and better product every year. Due to the fact that all of the herds are "closed", meaning that the mothers have calves every year, a new bull is brought in every year, but the calves remain on the farm until they are shipped to market. There is not combining of herds or buying in "finishing stock" which inherently increases the need for vaccines (because of all the other environments they are coming from), and reduces the health of the animal because they do not benefit from what's called micro nutrient accumulation - which is generations and generations of animals who have built up nutrients and healthy bones and tissue to produce even healthier babies - which then you benefit from. We believe in working with the environment that we are given to produce a product that is superb in nutrition and quality.
